Butterfish or Chiri (Peprilus midius) is a fish of the Pacific Ocean coast that lives mostly in areas ranging from the American coast in San Diego (California, United States) to Pisco (Peru).
Product characteristics
Its meat is white and its flavor is fatty. It is a medium-sized species, measuring approximately 33 cm, with a laterally compressed body, which is why in Peru it is usually called "palometa" or "pampanito".
This species is a coastal resource found in abundance on the northern coast of Peru, especially in the Tumbes region. It has a bone structure that allows the meat to be easily separated from the spines, making it much easier to eat at the table.
